This video recipe will demonstrate how to make a sourdough starter, also known as a natural levain or yeast culture. The process is fairly simple and straight forward but it does require that you pay attention to some visual cues and feed the starter on a regular basis for about the first week of its life or until it is strong enough to levain your first loaf of sourdough bread. In an upcoming audio lecture, (Eipsode 21 of The Stella Culinary School Podcast), we will be discussing the actual science behind sourdough starters and different strategies for creating, feeding and storing. The type of sourdough starter demonstrated in this video is a poolish, meaning that it's 100% hydration or a 1:1 mixture of flour and water. The basic process is warm water is mixed with flour, allowed to ferment at room temperature for about 48-72 hours (until yeast activity is seen). Once the starter is active, it is then strengthened by removing some of the starter and "refreshing" it by feeding equal amounts of flour and water. If you have questions about this process, please feel free to ask them in the comment section below. There will also be more information available on this episode's show notes page as new sourdough bread recipes, videos and lectures are released, so don't forget to bookmark and check back in a few weeks. The Personal Chef industry is one of the fastest growing industries in 2009. You don't need a 4-year degree in culinary arts or restaurant experience to excel in this fun vocation. You can be a part-time Personal Chef or build your clientele to provide a full-time income. Personal Chefs generally report an income of 0 - 0 per day for full-time efforts.
There is, however, a recipe for success. The ingredients are simple. The first thing you need to know is what a Personal Chef does. According to one recognized association, Personal Chefs design and execute menus for clients. They plan, purchase and prepare meals (usually once a week) either at the clients' home or in a rented professional kitchen. Meals are packaged and stored, either in the clients' refrigerator or freezer with heating-instruction labels.

Follow the recipe below to create your own path to Personal Chef success.
1 Sure Fire Recipe For Becoming a Personal Chef
1. Research the industry - educate yourself. Join Personal Chef associations and subscribe to enewsletters. Study the Shaw Guides to compare cooking school offerings.
2. Find and talk to others who are already in the industry - ask endless questions. You'll probably find plenty of everyday people who are already living the Personal Chef life when you poke around the above websites. Social networking sites will be helpful in locating like-minded people who love to cook and are connected in the industry. Don't be afraid to ask endless questions; listen well and take careful notes.
3. Join online cooking and culinary forums. Let yourself be known as a newbie in the Personal Chef field and that you're willing to learn. You'll find many kindred spirits with a love for culinary arts and serving others. If you feel comfortable, jump right in and answer forum members' questions.
4. Consider professional training. There are many fine Personal Chef Associations that offer Home Study courses and On-Site education. Seek out an association who provides the best, most comprehensive, cost-effective training programs available. You can go it alone but a little education goes a long way to ensure long-lasting success. That being said, don't let lack of formal education stop you from pursuing your Personal Chef dream.
5. Market to wealthy, local neighborhoods. Face it, you won't find many clients in poor to middle-class areas. Find the wealthy people in your area and blanket every door knob with your flyer. If you can afford it, postcards sent to a highly targeted list would most likely yield great results. Utilize online free ad space such as Craig's List and Backpage and advertise yourself to high-end clientele. When you market with a flyer or postcard, make sure it has an enticing welcome offer like a free dessert.
6. Make a simple plan. List main dish entrees, side dish selections, desserts, and prices. You can also offer customized dishes, depending on the particular needs of the person, couple or family you're serving. Carefully consider your pricing structure and don't lowball yourself and give away your services and time.
7. Assemble a portable bag with kitchen items: your own measuring cups/spoons, apron, recipes, good knifes (with blades protected for safety), and a compact fire extinguisher wouldn't hurt, along with a small box of baking soda. Depending on the kitchen supplies in the home, you might also need to bring your own pans and stirring/mixing utensils.
If words like meal planning, grocery shopping and in-home meal preparation is like music to your ears, you'll love being a Personal Chef. If being in the kitchen is your happy place, you'll find great fulfillment in serving others while making a very decent income.
Remember, every family is different and what one family loves, another family will find too fancy. One family might like very simple dishes and if they have kids, they very well might request the same dishes over and over. A professional couple might enjoy more elaborate meals. A senior may have special dietary needs you'll need to pay special attention to.
There are plenty of opportunities out there to exercise your love for cooking. Experience the freedom of owning your own business while boosting your income to whatever your financial goals are. It's satisfying to know you are providing great tasting food and giving the precious gift of time to whomever you are serving. Start today - use this sure fire recipe for your own culinary success.

I created this dessert for my last class in cooking school. We had to prepare a dessert with a four-course meal that we completed before we move into the situation further. We had to get out of the hat, the positions we were able to be classified to prepare for, and in a slotted period. We knew that we make a dessert, and no items were allowed to bring into the class that we wanted to use, within reason. I decided to bring in rock salt, coconut milk and shredded coconut. We always hadfresh ginger, nutmeg and sugar available, so I knew that I had that I have available for each dish. I am very much believe that my teacher had me dessert coconut-shell, through it ate every last bite, and I have a perfect result.
This is a great recipe, and it is very fun to make, and probably the easiest to make, too. I am glad that I share this recipe with you!
Ingredients you need:
1 can coconut milk (or) 16 ounces
1 / 4 teaspoon freshGinger
1 / 2 cup shredded coconut
1 / 8 teaspoon nutmeg
1 / 4 cup sugar - you can go much lower on the sugar market, if you will. Adjust it to you. Taste If you remove it completely, is an option. You can use a sugar substitute, but follow the instructions on the box.
2 cups of rock salt
4-5 cups of cubed or crushed ice.
4 small bowls
2 Large zip lock bags
1 bowl
You are now ready to make your ice cream. Add aBowl of coconut milk to 16 ounces. It's always good to shake the can of coconut milk before using to open it, go back up the fat coconut milk solids added to the liquid. It will mark the tenth, and cut a piece of ginger, peel and then cut and a paste, and paste it into the milk. Add nutmeg and sugar, and give it a good mix. You must taste, so they taste component that you want. If you add more nutmeg, ginger, or would want now is the time,do.
If you are diabetic, you could use a sugar substitute, sugar, or use at all. I have not tried, without sugar, so I would be interested in any feedback on this topic. But I think it would work.
You must now start ready for the fun. You can of coconut meat before or after. Simply take a small frying pan, and add your coconut to a pan over high heat to med-med and throw until they are golden brown. Remove from pan and save for topping the finished ice creamCream later.
Write a milk-cream mixture to the first ZIP LOCK bag and make sure it is sealed very well. If you work around a rubber band to make it out to keep this flutter is a good thing. In your second bag you add to the half of rock salt, and half of ice on the bag. The following display your 1st Zip-Lock bag with the milk mixture, and then the rest of the ice and rock salt. They will then let the children play when we help you out.
This is best done outsidein an area that will not matter if things get a little out of hand. You need to press hard for about 5-10 minutes, or until the milk begins to shake a frozen solid. They are then removed from the bag of ice and rock salt. Mix very gently dab with cold water and dry. Immediately, the semi-frozen mixture put into the dish, and in the freezer for about 5-10 minutes. Remove from freezer and add your roasted coconut to the top and dig in.
I love this recipe, andIt is a lot to be fun. It is also one of the best desserts that I have ever eaten so well.
Creme Brulee is a classic dish of smooth cream with caramelized sugar topping. Creme Brulee is highly contested by the actual origin of this dish. I am pleased with my notes, which brewed during the visit of a French cooking school. The court that I have many times, of course, the so-called classical French version. There are many different opinions about where the dish originally came from, such as Spain, England or France. I only know that is very Creme Bruleeeasy to make, and it is equally delicious. It is one of my favorites, and it is always a hit at any event dinner.
Ingredients you need:
10 egg yolks
1 / 2 cup granulated sugar
3 cups cream
1 tablespoon pure vanilla bean paste
1/4-1/2 cup granulated sugar, this will be at the top of the cooled add cream and caramelize with a torch.
2 large stainless steel mixing bowls, if you have them, the glass will work well, even
PreheatThe oven to 300 ° C. Preheat You must be a large glass or metal bowl, and I prefer stainless steel, which has a flat bottom to use. I like the ones the flat floor without the stamp of mold on the bottom of the bowl, because it helps much better mixing. The whisk in a position to all the places of the basin, where, how, when a form or ring piston is at the bottom of the whisk, not in a position to have to get accept all the ingredients. You must whisk together egg yolks and sugar until fluffythe sugar is dissolved. You will know that this has happened, if the mixture is thick and the color of the mixture is pale yellow. Add your cream and vanilla, and continue to whisk until well blended. Strain into a large bowl, skimming off any foam or bubbles.
You need to be as homogeneous as possible from your custard mixture into the 8 ramekins, distributing or some call it pudding cups. Place ramekins in a large deep-sided sheet pan in a water bath, which iswhere the water about halfway up the sides of your ramekins. The water is usually 1 to 2 cm in total in the pan. It will cook the cream until the cream is a gel consistency, or placed at the edges, but still pretty loose, but not liquid in the center, about 45 minutes to an hour, depending on your oven.
Remove from the oven and the water bath. If you have a metal or cooling rack, you will feel it in the rack for 20-30 minutes, or until cool. You want them quickly in the refrigerator to get that too. There are eggs in this dish, and you want to take this opportunity to reduce the growth of bacteria. You want them in the refrigerator for at least a few hours, or you can chill chill overnight. If we prepare this dish in cooking school, we chilled them overnight.
When you are ready to serve your creme brulee dessert, sprinkle about 2-3 teaspoons of sugar over each cream. Achieve the best results, use asmall, hand-held torch to melt sugar, if you do not have a flashlight and want to get one, they are available in most department stores, the home institution. Until you buy a flashlight, you own other options that you can place your ramekins under the broiler until the sugar is melted. Make sure you keep a watchful eye on them so they do not burn, and all the hard work is not wasted. Enjoy!
